Ingredients
- Chicken thighs
- Chicken marinade: ¼ cup of Greek yogurt, ½ Lemon – juiced, ½ tbsp Garam Masala, ½ tsp Cumin, 2 Cloves of Garlic – grated, 1 inch knob of Ginger – grated
- 1 Onion – sliced
- 1 tsp of Ginger – grated
- 3 cloves of Garlic – grated
- 2 tsp of Garam Masala
- ½ tsp of Chili Powder
- ½ tsp of Cumin
- 4 tbsp of butter
- 2 cups of Tomato Sauce
- ½ cup of Milk (or cream – I just didn’t have any)
Recipe
- Marinate cubed chicken thighs (overnight if possible) in the Greek yogurt, lemon juice, and spices, and salt and pepper
- Cook the chicken then remove to a bowl
- Sautè 1 sliced onion until golden
- Add the grated ginger and garlic cloves and cook until fragrant
- Add the garam masala, chili powder, and cumin then allow to toast for just a minute
- Add the butter and melt that together with the spices and onion
- Add the tomato sauce and milk
- Add the chicken back in to the pan with the sauce and simmer for about 30 minutes to thicken
- Serve over white rice and/or with nan
- Optionally, garnish with cilantro
