Butter Chicken

Ingredients

  • Chicken thighs
  • Chicken marinade: ¼ cup of Greek yogurt, ½ Lemon – juiced, ½ tbsp Garam Masala, ½ tsp Cumin, 2 Cloves of Garlic – grated, 1 inch knob of Ginger – grated
  • 1 Onion – sliced
  • 1 tsp of Ginger – grated
  • 3 cloves of Garlic – grated
  • 2 tsp of Garam Masala
  • ½ tsp of Chili Powder
  • ½ tsp of Cumin
  • 4 tbsp of butter
  • 2 cups of Tomato Sauce
  • ½ cup of Milk (or cream – I just didn’t have any)

Recipe

  1. Marinate cubed chicken thighs (overnight if possible) in the Greek yogurt, lemon juice, and spices, and salt and pepper
  2. Cook the chicken then remove to a bowl
  3. Sautè 1 sliced onion until golden
  4. Add the grated ginger and garlic cloves and cook until fragrant
  5. Add the garam masala, chili powder, and cumin then allow to toast for just a minute
  6. Add the butter and melt that together with the spices and onion
  7. Add the tomato sauce and milk
  8. Add the chicken back in to the pan with the sauce and simmer for about 30 minutes to thicken
  9. Serve over white rice and/or with nan
  10. Optionally, garnish with cilantro
