Ingredients
- 1 lb of Italian Sausage (half hot, half sweet)
- 1 Onion – diced
- 5 cloves of garlic – minced
- Red pepper flakes
- 2 tbsp of tomato paste
- 1/4 cup of vodka
- 15oz can of tomato sauce
- 1/2 cup of cream (I used goat milk and it added a nice tangyness)
- Spinach
- Parmesan
Recipe
- Remove the sausage from the casing then brown in a pan
- Add in the onion and cook until translucent
- Add in the garlic and a pinch of red pepper flakes and cook until fragrant
- Add the tomato paste and stir to distribute and cook for a few minutes
- Deglaze the pan with the vodka
- Stir in the tomato sauce and cream
- Stir in a few big handfuls of spinach
- Allow the sauce to simmer while the pasta cooks. Taste and add salt and pepper as needed!
- Add your pasta directly in to the sauce and stir to combine – reserve some pasta water
- Add parmesan cheese to your liking and toss with a little pasta water to melt everything together
