Spicy Sausage Vodka Pasta

Ingredients

  • 1 lb of Italian Sausage (half hot, half sweet)
  • 1 Onion – diced
  • 5 cloves of garlic – minced
  • Red pepper flakes
  • 2 tbsp of tomato paste
  • 1/4 cup of vodka
  • 15oz can of tomato sauce
  • 1/2 cup of cream (I used goat milk and it added a nice tangyness)
  • Spinach
  • Parmesan

Recipe

  1. Remove the sausage from the casing then brown in a pan
  2. Add in the onion and cook until translucent
  3. Add in the garlic and a pinch of red pepper flakes and cook until fragrant
  4. Add the tomato paste and stir to distribute and cook for a few minutes
  5. Deglaze the pan with the vodka
  6. Stir in the tomato sauce and cream
  7. Stir in a few big handfuls of spinach
  8. Allow the sauce to simmer while the pasta cooks. Taste and add salt and pepper as needed!
  9. Add your pasta directly in to the sauce and stir to combine – reserve some pasta water
  10. Add parmesan cheese to your liking and toss with a little pasta water to melt everything together
